Wow! We have quite the eclectic feast going on here, from Pitas and Skookum Succotash to Deer Chili and then, oh that pizza!!
When I saw that yummy looking pita bread and I started thinking about what kind of filling they needed. The possibilities are endless. Here's my favorite, a simple corn and black bean mixture. I like to add lots of chopped sweet red pepper and a little chili powder and cumin, or sometimes a touch of cilantro. Cheese is variable and optional. Play with the recipe and make it your own.
Just mix together these ingredients and enjoy with the pita. Does anyone else have ideas on how to fill those empty pockets?
kernals stripped from 4 ears of cooked fresh corn
3 cups black beans (2 cans)
1 large red onion, chopped
3 tablespoons balsamic vinegar
1 tablespoon olive oil
2 oz crumbled feta cheese, extra sharp, or whatever you like.
