The SKOOKUM TRIBE> serves this dish for the whole tribe in a giant carved out pumpkin shell. It is delish and nutritious too. Use fresh vegetables from the gaden 6 ears corn 1 green pepper 2 tomatoes 1 med. onion parsley olive oil or baconpaprika 1 cup yellow squash & 1 pumpkin & 1 zucchini cubed 1 ib. fresh lima beans,p. third cup water S&P Cut kernels from corn cobs and scrape all pulp and milk from cob. Grill peper over flame and when it blisters, peel, seed, and cut into strips. Do the same with tomatoes, chopping them after seeded. Fry onion, & parsley, and garlic in oil or bacon until golden brown. Add paprika, saute for 1 or 2 min. Add tomat,pepper, corn, squash, limas and toss. Add water-just enough to moisten the vegies, season to taste. Cover tightly. Simmer for 30 min. till vegies are tender. Uncover, simmer rapidly for 5 min, to reduce liquid. Season to taste. Serves 8. In S. America this dish is called Locro de Choclo. Enjoy!
