I had this at my sister's last week on Labor Day, it is something you serve with tortilla chips. When I heard the ingredients I was skeptical because I absolutely detest two of the ingredients (cilantro and jalapenos). However I was pleasently surprised, it was delicious! Below is my sister's recipe but here's a warning, she's like me and doesn't measure. She just throws it all together. I suggest trying it with Tostidas hint of lime chips.

Texas Caviar
Several chopped fresh tomatoes
1 can of black eyed peas
1 can of hominy
Dried or chopped fresh cilantro
Dried or chopped fresh parsley
1-2 minced cloves of garlic
1 chopped green, red, or yellow bell pepper
chopped onion or chopped green onion
1 chopped jalopeno pepper
1/2 cup of italian dressing
1 can of corn (optional)
Throw it all into a bowl and stir it together, put in the fridge to cool then enjoy!
