    This was my own creation. There's nothing low calorie or low fat about it, but it's sooooo good!

    The amount of any given ingredient can be varied a bit.

    1 lb ground beef (other ground meat or textured vegetable protein can be used)
    1 medium onion, chopped
    3 chopped green onions (optional)
    one 15 oz can red navy beans (or black beans)
    1/2 pound finely grated Parmesan (or Romano cheese)
    30 oz of spaghetti sauce (almost any kind of tomato based sauce will do)
    2 c shredded (3 or 4) cheese mix
    one bag of corn chips (13-16 oz)

    1)Pre-heat oven to 325 degrees. In a frying pan, over medium heat, brown beef, onions and green onions until the onions become nearly clear and the beef has no pink. Drain off the excess fat.

    2) While waiting for the beef to brown, thoroughly rinse beans and then mix in a large bowl with spaghetti sauce and grated cheese. Once beef and onions are finished add to the bowl and mix well. (I call this mix "gook")

    3) In 9 x 13 pan layer 1/3 chips, 1/3 cheeses,1/2 gook, 1/3 chips, 1/3 cheeses, 1/2 gook, remaining chips topped with cheeses.

    4) Bake at 325 for about 30 minutes, until casserole is heated through and cheese on top is melted. Serve with a green salad.

    Serves between 6-8
