Here's a little tid bit from my dear old granny.
1.5 cups of self raising flour,
1.5 cups of castor sugar,
3gms soft butter,
3 eggs,
dash milk,
2 peeled bananas,
Banana essence.
Mix together butter, eggs and sugar until it makes a fine paste. Sift over the flour and fold with a knife until it becomes thick, then finish off by using an electric whisk. Add four drops of banana essence and continue to whisk. Lightly grease pan using butter, and chop the peeled bananas. Place half the sliced bananas onto the bottom of the pan, then pour on cake mix. Place the remaining banana slices onto the top of the mix and put in a preheated oven of 180oc for 30mins. Take out and allow to cool on a baking rack, and drizzle with icing sugar when cold.
