    Recipes From the Orkney Islands, edited by Eileen Wolfe. recipe from B. Coghill, Birsay

    1 oz. margarine
    1 oz. flour
    1/4 pint milk
    2 eggs, separated
    1 haddock, boiled
    Seasoning

    Skin and bone haddock then rub through a sieve. Melt margarine in a pan and add flour. Slowly add milk to make a thick sauce. Remove from heat, add egg yolks, fish and seasoning. Fold in stiffly beaten whites. Bake for 25-30 minutes in oven at 350F
