Don't let the fancy name scare you. This is an easy recipe for slow-cooker or crockpot that you can set up ahead of time, perfect for holiday feasting. The Guinness has the same effect as the wine in Coq au Vine, tenderizing the lamb.
2 1/2 to 3 pounds mutton or lamb shanks
1 large onions
6 medium carrots
2 tablespoons seasoned flour
Beef drippings or lard
6 fluid oz Guinness stout
2 fluid oz water
1 bunch of fresh parsley sprigs, chopped
Cut meat into chunks. Peel and slice onions and carrots. Toss meat in flour and then brown it quickly in the drippings. Remove meat and fry onions gently in same skilled, until transparent. Put meat, onions, carrots, Guinness and water into slow cooker crockpot. Cover tightly and cook for at least 2 hours, checking to add a little more liquid if necessary. You don't want it to dry out. Before serving sprinkle with chopped parsley. Serve with mint sauce and plain boiled potatoes.
