1 cup all purpose flour
1/2 teaspoon cinnamon
1 rounded teaspoon ginger
1 level teaspoon baking soda
8 oz. oatmeal
2 tablespoons butter
l tablespoon lard
8 oz. soft brown sugar
4 tablespoons molasses
1 beaten egg
5 - 6 tablespoons milk
Line an 8" or 9" square tin with greased paper.
Sieve together flour, cinnamon, ginger and baking soda. Add oatmeal, mixing well. Slowly beat together butter, lard, sugar and molasses, mixing well. Add mixture alternately with egg to flour mixture, then add milk till it is a fairly soft dough. Turn into prepared tin, smooth top and bake at 300 for 50 to 60 minutes. Leave to cool and store in tin. Cut in squares next day
