Cut two 12 oz sweet potatoes into 8 wedges each. [Weight is approximate of course. Please note that a "sweet potato" is a Jersey Sweet which is light in color. A "yam" is another type of thing all together--it is dark orange in color and grows in warm places like Louisiana.]
Toss with 2 Tbsp melted butter and 1 tsp ground nutmeg.
Pour 3/8" of water into casserole dish. Add sweet potato wedges.
Bake at 350 F for 20 min.
Remove from oven. Sprinkle potatoes with 2-3 Tbsp pure maple syrup.
Top with 2 Tbsp chopped fresh parsley
Cover. Return to oven for 20 min.
Transfer to serving dish and pour maple syrup juices on top.
Serves 4.
