I was inspired to cook this dish after we returned from a trip to Italy. I am estimating amounts as I usually don't measure.

10-12 small pieces of bread: coin-sized medallions or cuts from French bread
    6-7 fresh basil leaves, cut
2-3 small tomatoes (home-grown are best.)
1/2 cup olive oil (I use fancy olive oil with garlic.)
    1/4 pound Mozzarrela cheese, sliced

Preheat oven to 350 degrees. Brush bread with olive oil. Add tomato slices, then cheese slices, then basil snips. Bake on a tray for about 15 minutes. Then serve and collect the compliments! People LOVE this dish. It's a great appetizer for an Italian meal.
