My Navajo neighbor actually gave me this recipe. It is fast, easy and oh, so yummy!!
Ingredients:
1lb bulk Italian Sausage
1 medium onion, sliced
1 1/2 cup water (I use two)
1 tblsp dried basil
2 med zucchini (green and yellow) (I use a yellow squash instead of the yellow zucchini)
1 can (l6 oz) whole tomatoes, undrained
1 can garbanzo beans, drained
1. Cook sausage with onion over medium heat until sausage is no longer pink; drain
2. Stir in remaining ingredients, breaking up tomatoes.
3. Cover and simmer about five minutes or until zucchini is tender.
And that's it! I do add about four bay leaves as well and then take them out when the soup is done cooking.
