    Fried Green Tomatoes

    about 2 pounds green tomatoes
    4 eggs
    3/4 cup milk or water
    1 cup cornmeal
    1/4 cup all purpose flour
    1 tablespoon salt
    1/4 tsp black pepper
    1/4 cup bacon drippings or lard
    2 tablespoons butter
    Wash tomatoes. Cut off and throw away tops and bottoms. Slice tomatoes about 1/2 inch thick and drain on paper towels while you beat the eggs, milk or water, cornmeal, salt and pepper together to make batter. In a large cast iron skillet, heat bacon drippings with butter till very hot but don't let the butter burn. Dip tomato slices into batter then fry to brown quickly on both sides. Serve hot!
