    Hickory Nut Cake

    A treat for any autumn potluck feast, too good not to share. Your choice of frostings or none at all. However you make it, it's delicious!

    * ***CAKE***
    * 2 cups sugar
    * 2/3 cup butter
    * 3 eggs
    * 1/8 teaspoon salt
    * 2 teaspoons baking powder
    * 2-1/2 cups all purpose flour
    * 1 cup milk
    * 1 teaspoon vanilla
    * 1 cup hickory nuts, chopped(reserve a few halves for garnish)

    1. Cream together sugar and butter for cake
    2. Add eggs; beat on medium speed on mixer for 2 minutes
    3. Mix dry ingredients together lightly with a fork.
    4. Add to creamed mixture alternately with milk.
    5. Mix well.
    6. Stir in vanilla and nuts.
    7. Pour into a greased & floured13-in. x 9-in. x 2-in. pan or two
    8-in. pans.
    8. Bake at 325 degrees for 45 - 50 minutes.
    9. Cool.

    * *****PENUCHE FROSTING**** *
    * 1/2 cup butter
    * 1 cup packed brown sugar
    * 1/4 cup milk or cream
    * 2 cups confectioners sugar
    * 1 teaspoon vanilla

    Melt butter in medium saucepan.
    Add brown sugar; boil for 2 minutes.
    Add milk; bring to boil
    Remove from heat; cool to lukewarm.
    Beat in sugar and vanilla. (Add 1/2 cup chopped hickory nuts, if
    desired)
    Frost cake.
    Garnish with reserved hickory nut halves.

    ::::MAPLE FROSTING ::::

    1 (8 ounce) package cream cheese
    1/4 cup butter
    4 cups confectioners' sugar
    1 teaspoon vanilla extract
    1/2 teaspoon maple flavored extract
    Blend/whip all ingredients.
