In fact, they are also famous for their tasty dishes. Actually, as you will find when googling many of these dishes/ingredients, often the scariest ingredients result in the best food. We really don't mean to knock Vietnamese cooking!
Vietnam has always had a large peasant population who's only means of earning was working the land or fishing. Both difficult, underpaid, thankless skills. They used the produce and meats that were the most affordable. The goods the royal family and high income government employees threw away basically. But just because their ingredients were weird, well why should they suffer? And what ensued over the coming centuries were intricate, highly evolved recipes. Each with the intention of making the best of what they had. Very honorable, don't you think? Not just Vietnam, this same practice is done in many climbs.
So this is extra reason not to insult your hosts during this writing exercise! Get it all out of your system here, so when you eat the real thing you will know how to behave *eg*
