There are ten species of hickory nuts. Some of them are very bitter, but the shagbark hickory produces tasty nuts that taste similar to pecans. They are small though - it takes 100 nuts in the shell to get a pound of nutmeats. The natives made flour from hickory nuts, and added them to soups. The flour added to water made hickory milk which the Cherokee called ganu gwala sti. The oil pressed from the nuts was used in cooking and as a hair dressing. The hulls produce a brown dye.
