Codfish Fritters
Bolos de Bacalhau

Ingredients:

Dried Codfish
2 lbs Potatoes
4-6 large Onion
Diced Parsley 1/2 Cup
1 or 2 Eggs
Salt & Pepper
Olive Oil
2 TBSP Flour for dredging(optional)
Olive Oil for frying.

Instructions:

Soak the cod in cold water overnight changing the water every three hours. Drain and put in large pot with the peeled and quartered potatoes. Add water to cover. Bring to a boil and lower heat to a slow simmer. Cook until the potatoes are easilly pierced with a fork. Drain and let cool. Using your fingers, remove any bones from the cod and shred into tiny pieces. Add the potatoes and mash them with a fork until incorporated. Add one minced anion, the minced parsley, and salt/pepper and any other spices to taste. I've used curry and paprika and cumin. Add one or two raw egs and mix in. This will help the mixture to hold it's shape when frying. Using two soup spoons form cakes and dredge in flour. This will make the cakes easier to handle. Fry in 1/2" of hot oil until golden brown. Drain on paper towels and serve immediately.

Portuguese Kale Soup
Caldo Verde

Ingredients:

1/2 cup olive oil
1 medium onion chopped
1/4 pound of garlicky
smoked sausage such as chourico or linguica (sliced)
3 medium potatoes
6 cups of water
1/2 pound of Kale
salt to taste

Instructions:

Place oil in a medium skillet and saute with the onions and sliced sausages. Set aside. Peel and slice the potatoes and cook in the water until quite soft. Mash into the water. Slice the kale as thinly as possible into very fine julienne threads. Add to the potatoes and water. Simmer for 5 minutes, add the reserved sausage, onions, and oil. Heat through for 1 or 2 minutes. Do not overcook. Salt to taste.

Portuguese sweet rice
Arroz doce

Ingredients:

4 cups milk
4 cups water
1 cup sugar(separated)
1 cup rice
1 stick butter
3 eggs(separated)
1 tsp. vanilla
pinch salt
cinnamon(garnish)
lemon(optional)

Instructions:

Separate the eggs, beat the whites until stiff and set aside(keep cold). Beat 1/2 cup of sugar with the yolks, and vanilla set aside. In a pot, bing to a boil: the milk, water, 1/2 cup sugar, and salt. Slowly add the rice, stirring constantly. When rice absorbes the liquid, test for doness, add more milk if necessary and the the butter. Mix well stirring constantly. When rice is fully done, remove from heat. Very slowly beat in egg yolk mixture. Fold in stiff egg whites. Finally, add grated lemon peel and a little juice if desired. Spinkle cinnamon on top and if you wanto to make something tradition, try to draw some flower or geometric signs(it's not easy).
