Quick Almond Burfi
Burfi is a very popular Indian sweet. It comes in several varieties and flavours, but almond burfi is the most enjoyed. Burfies are traditionally made from Khoa, Indian condensed milk; however, in this quick version, double cream is used. In India, burfies are often covered with edible beaten silver leaves.
Ingredients
250 gm. ground almonds
250 ml. double cream
250 gm. sugar
100 gm. ghee (butter)
chandi varak (silver leaf)
Preparation
Grease flat Swiss roll tray or thali with a drop of butter or ghee. Set aside. Heat ghee in wok or kadhai. Add all other ingredients and cook, stirring constantly, until it starts to come off the pan (approximately 5 minutes). Spread evenly on tray and cover silver leaf. Cool. Cut into squares or diamonds. Store in airtight box.
Serves 8-12
Notes
If you use tinned condensed milk instead of double cream, be sure to omit sugar as it's already sweet.
Edible silver leaves are thin sheets of beaten silver available in good Indian stores.
